Re-purposing Leftovers

Minimize food waste by planning a leftover night or using similar ingredients for different meals!

Meat

Take any meat (cooked or uncooked) and vegetables you have on hand and sauté them up in a pan with your favorite sauce (soy sauce, teriyaki, etc.) and toss over brown rice, quinoa, pasta, cauliflower rice or whatever you have on hand

A homemade roasted chicken or store bought rotisserie chicken can be used for different meals throughout the week

  • Toss it over a salad one night
  • Eat it with roasted vegetables and either a sweet potato or regular potato on the side
  • Use it for chicken tacos
  • Make homemade chicken salad (using celery, grapes, nuts, plain Greek yogurt)
  • Use the chicken for white chicken chili

Leftover fish can be used in a variety of ways as well.

  • Fill a tortilla with any flaky fish and combination of vegetables to make fish tacos
  • Top a salad with tuna, salmon, shrimp
  • Use to make salmon or tuna patties

Vegetables 

  • Leftover vegetables can be chopped up and put together in a soup – add meat, beans or pasta to bulk it up
  • Use leftover vegetables and/or meat to make a quiche, omelet or frittata.
  • Use leftover vegetables to make veggie and meat or black bean quesadillas

Pasta 

  • Add meat and vegetables to any leftover pasta and add either a white or red sauce and bake
  • Take leftover spaghetti noodles along with vegetables and beat egg, pour into muffin and bake

Fruit

Bread

  • Stale bread can be used to make breadcrumbs or croutons

If you don’t have enough leftovers for a dinner meal, use the leftovers for lunch the next day

  • Wrap leftover meats and veggies in a tortilla or stuff it into a pita pocket
  • Top a salad with leftover meats and vegetables.  Can add fruit and nuts as additional toppings.
