Do you find yourself thinking that salad is boring? We promise it’s not! Salads are a great way to keep your meal light and by taking any of these recipes and adding in proteins of your choice, they can be filling as well!
Spinach Apple Salad
Start with a bed of greens and add crisp apples and pears (optional). Top with walnuts or pecans. To add a little sweetness to the nuts toss them in a skillet with a little maple syrup for a few minutes. Drizzle balsamic vinaigrette over the salad.
Start with a bed of chopped romaine lettuce. Add halved cherry tomatoes, sliced shallots or onions, sliced cucumber, and pepperoncini to add a little heat. Top with some shredded Parmesan cheese. Toss with some Italian dressing.
Start with a bed of greens and add corn kernels (thawed from frozen, leftover corn on the cob, etc.), halved cherry tomatoes, black beans, bell peppers, onions. Top with a salsa ranch or cilantro lime dressing.
Start with a bed of greens. Add your favorite toppings (ideas include red and/or green onion, chopped cucumber, shredded carrots, radishes, sunflower seeds, croutons, etc.). Top with favorite dressing.
Summer Fruit Chopped Salad
Start with a bed of greens. Add chopped strawberries, mandarin oranges, grapes, granny smith apples, walnuts. Top with a fruit dressing.
Strawberry Spinach Salad
Start with a bed of spinach. Add sliced strawberries, red onions, toasted almonds, feta cheese crumbles. Top with strawberry vinaigrette dressing.
1 1/2 cups sliced ripe strawberries
2 tbsp maple syrup
2 tbsp apple cider vinegar
1/4 cup olive oil
14 tsp salt
In an immersion blender, small blender or standard blender, blend all ingredients until smooth (An immersion blender and small blender are the quickest, but you can also use a standard blender: just blend for a few minutes until fully combined. This would not work as well in a very large high-speed blender since the number of ingredients is small.)
