Dessert doesn’t have to be off-limits when you’re eating healthy. Keep the calories down and the taste up with these fun fruit dessert ideas!
Nice Cream (Banana Ice Cream)
Ingredients
2-3 overripe frozen bananas
Optional milk of choice, if needed
Pinch salt
Instructions
1.) Start with bananas that are turning brown. Peel and cut into large pieces, then freeze in an airtight bag or container. (You can freeze a whole bunch at once so they’re ready whenever you want to make banana ice cream.) To make the ice cream, throw around 2-3 frozen bananas into a blender, food processor, or Vitamix – adding a pinch of salt and 2-4 tbsp milk of choice for smoother blending if desired – and blend until you achieve a soft-serve texture. You can serve immediately, or transfer to a container and freeze an additional 30 minutes, then scoop out with an ice cream scoop.
Chocolate Banana: Use 3 bananas. Add 1/4 tsp pure vanilla extract, pinch salt, and 3 tbsp cocoa powder.
Very Berry: Make the original recipe above, adding 1 cup frozen berries of choice and 1/8 tsp pure vanilla extract.
Strawberry: Use 2 bananas. Blend in 1/2 cup frozen strawberries. Add 1/4 tsp pure vanilla extract and optional shake of cinnamon.
Vanilla Bean: Use 3 bananas and a pinch of salt. Add 1/2 tsp vanilla bean paste.
Fruit Salad in Waffle Cones
Cut up your favorite fruit and make a fruit salad (strawberries, blueberries, raspberries, blackberries, kiwi, watermelon, grapes, honeydew, cantaloupe, etc.).
Add fruit salad to store-bought or homemade waffle cones and enjoy!
Optional: dip your cones in dark chocolate and serve with your favorite fruit dip
Grilled Peaches
Ingredients
3 peaches, sliced in half and pitted
1 tbsp oil (canola, coconut, avocado)
Instructions
1.) Preheat the gas grill to medium-high heat on half the grill and low heat on the other half of the grill.
2.) Brush the cut sides of the peaches with oil.
3.) Place peaches on grill, cut side down over direct heat, until the fruit has developed grill marks and started to soften, about 4-5 minutes.
4.) Brush the tops of the peaches with oil, turn over and move to the indirect heat side of the grill to continue cooking, another 4-5 minutes.
Peach Parfait: Layer grilled peaches with Greek yogurt and homemade granola
Chocolate Dipped Strawberries
Ingredients
10 oz package Ghirardelli Baking Chips bittersweet, semi-sweet, or milk chocolate
2 lbs fresh strawberries, stems attached
Instructions
1.) Wash and dry the strawberries.
2.) Prepare desired toppings (nuts, toasted coconut, etc.)
3.) Prepare your workspace with a parchment-lined baking tray to place the dipped strawberries on.
4.) Melt the chocolate in a double boiler or in the microwave.
5.) Dip the strawberries in melted chocolate.
6.) Coat in desired toppings.
7.) Lay the strawberries on the prepared baking sheet and allow them to rest until the chocolate has set.
8.) Drizzle with melted white chocolate if desired.
